Mild Fish Curry

If you like a warming curry, then this recipe is for you. It’s a milder one that has fresh flavour to it which works perfect with a white fish.

Ingredients

2 Cod fillets
1 can coconut oil
1 cup of chopped spring onion
1 small broccoli
300g dwarf beans
1 lime
1 inch ginger
2 cloves garlic
2 teaspoons turmeric
1 teaspoon cumin
1 handful of fresh basil
2 teaspoons fish sauce
1 stick of lemon grass
Salt & pepper
Coconut oil for cooking

Directions

  1. Preheat the oven on 175 degrees
  2. Heat up coconut oil in a pot on medium heat
  3. Add chopped spring onion, grated garlic and ginger. Cook until soft.
  4. Toss in all spices in the pot with fresh basil, roughly chopped lemon grass, fish sauce and a dash of water. Stir carefully to create a thick paste.
  5. Last pour into one can of coconut milk. Let it cook for roughly 10 min
  6. Place the food in an oven tray with dwarf beans and broccoli.
  7. Pour the curry over the fish and vegetables. Make sure every bit is covered
  8. Place in the oven, in the middle for 30-40 min
  9. All done! Serve with brown rice, cauliflower rice or spiced up sweet potato mash
