Sweet potato falafel

Falafels are a great vegetarian option if you go visit a Turkish restaurant. With chickpeas as the main ingredient they have a high level of plant based protein. These are far from dry and easy to bake in the oven.

Ingredients

400g sweet potato
1 can of chickpeas (200g)
½ red onion
½ cups of rice flour
1 big handful of spinach
2 cloves of garlic
1 small handful of parsley
1 tsp cumin
Salt & black pepper

Directions

Start by peeling the potato and cut into small pieces before putting in a pot with water. Boil until the potato is soft, be careful not to cook them for too long. They can retrain a bit of water if they are overcooked. In a food processor or use a hand mixer, blend together chickpeas, onion spinach, garlic, parsley and the spices to a smooth consistency. When the potato is ready, empty the water and mash them up. Mix the mashed sweet potato with the remaining ingredients. Add the flour and mix it all together. Time to get your hands dirty! Roll the paste to around 60g heavy balls and put on a try with baking paper. Bake in the oven for around 25-30 min on 180 degrees. Enjoy in a yummy salad or with pita bread.
