Coconut & Raspberry balls

If you feel like a sweet treat that is both quick and simple to make, this is the recipe for you. Perfect for a weekend treat or if you fancy something sweeter as an afternoon snack. A ‘all-in-one-mixer’ kind of bliss ball that almost taste like bounty bars but with a raspberry touch.

Ingredients

70g almond
70g shredded coconut
50g frozen raspberry
2 tsp coconut oil
2 tsp maple syrup (or sweetener of choice)
1 tsp water

Coating

50g dark chocolate
1 tsp coconut oil
Chopped almonds

Directions

Start by blend the almonds to flour. Melt the coconut oil and add to the blender with the remaining ingredients. Blend it all together to a sticky consistency. If the texture is not sticking together well enough, add another tsp of water. Roll the balls to around 30g balls and let them rest in the fridge for 1hr.
Next step is to melt the chocolate over warm water with the coconut oil. Let I cool down for a few minutes before you coat the chilled balls. Sprinkle chopped almonds on top and let them set in the fridge before you enjoy them.
