Baked sweet potato

There are so many ways to cook sweet potato. Enjoy them either boiled, fried, baked or mashed, any option is delicious. I am a big fan of this root vegetable and will properly never get sick of the flavour. My latest experiment might be my favourite at the moment and there are so many toppings that you can mix it up with.

Ingredients

1 small sweet potato
Coconut oil
Nutmeg
Salt
Pepper
Maple syrup

Direction

Preheat the oven on 200 degrees. Start by cleaning the potato with water and cut away any necessary parts. Use a knife to cut a cross at the top of the potato and make small holes with a fork. Pensile the potato with coconut oil and spice it up with salt and pepper before you put it in the oven. Every 15 min check on the progress and add more oil if needed. When the potato has soften up, put some nutmeg on top and a drizzle a bit of maple syrup in the cross. After it’s cooked, open it up and top it up with anything you like!

Toppings

I recommend frying up mushrooms with onion and sage, plus hummus as the cherry on top.
