Christmas banana bread

Festive season is here and I feel so inspired to cook and bake. Makes me so happy to be in a warm kitchen filled with the lovely smell of cinnamon, orange & clove. There are so many things I want to create at the moment. First on my list was this gluten free, dairy free and sugar free banana bread. Super simple to make and got a small hint of Christmas vibe to it.

Ingredients

4 bananas (ripe)
4 eggs
4 tbsp. coconut oil (melted)
½ cup  almond butter (you can use other nut butters as well)
½ cup  coconut flour
2 tbsp. baking powder
1 pinch of salt
1 tbsp. Christmas spices

Christmas spice mix

2 tbsp. grounded ginger
2 tbsp. cinnamon
1 tbsp. star anise
½ tbsp. nutmeg

Directions

You can choice to make this recipe in bowl with a hand mixer or use a blender. Start with mixing the bananas into a smoothie consistence. Add the rest of the ingredients and blend it all together. Dress a bread tint with baking paper to avoid it sticking. Poor your bread mix into the tin and sprinkle some extra cinnamon on top. Bake in the oven for 50-60 min on 175 degrees. Let it set outside the oven for a few minutes before serving. Enjoy it as it is or top it up with almond butter for extra deliciousness.

Tips

When picking bananas keep in mind that they are sweeter if they are riper. If you have good bananas, then you won’t need to add any sugar. You can take the Christmas spices out and only use cinnamon.
