Breakfast casserole

Summer is once again over and we are all getting ready for a new season. With dark and cold mornings, it is now a good time to change breakfast routine to something warmer to start the day right. I am a big fan of brunches (or second breakfast) and made this simple baked casserole with banana, oat & eggs as main ingredients. Perfect for a weekend morning when the weather is anything else then inviting. 

Ingredients 

  • 100g eggs (I used 1 whole egg and 50g egg whites)
  • 50g oat
  • 1/4 cups almond milk 
  • 1 apple
  • 1 banana
  • 1 tsp. cinnamon
  • coconut nectar (or any sweeter of choice)
  • almond butter
  • raw cacao nibs 

Heat up the oven on 150 degrees. Chop up the apple in dices and cook with coconut oil until soft, add cinnamon at the end. Spread the cooked apples out at the bottom of a small oven tray. Mix the eggs, milk, cinnamon and coconut nectar in a bowl until fairly fluffy. Add the oat and mix it all together. Poor it all over the apples. Cut up the banana and place it on top of the tray. Add your cocoa nibs and put the tray in the oven. Bake for 10-15 min, until the mix is settle but not too long so it dry out. When ready drizzle the nut butter on top and enjoy!
